My favorite low sodium pancake mix

So one of the issues I have is most convenience foods are high in sodium. And I really miss convenient pancakes. Yes, I know I can make them from scratch. But there's also something to be said for not having to really think about a meal. Know what I mean? So that's where Willow Mill Creek buttermilk pancake mix comes in.


Anyways, this mix is phenomenal! I was gifted a package of this last year. I didn't think much of it at the time until I was diagnosed with CHF and CKD this summer. I found it in the depths of the pantry when I was cleaning out my sodium laden foods. I was so dismayed to be tossing out my favorite pancake mixes, but at 400-600mg a serving, there was no way I could hang on to those bad boys. So I was beyond thrilled that my mom gave this to me. Total sodium count using 1/4 cup batter is about 36mg per pancake. I use water as the liquid since I don't typically have milk on hand.
