Ingredients You'll Need

For the Cream of Mushroom Soup
  • 6 tablespoons unsalted butter

  • 3 garlic cloves, minced

  • 1/4 cup umami mushroom powder (this is just dried mushrooms, ground into powder. Dried mushrooms are usually found with the dried fruit and nuts. You can substitute one pound of minced fresh mushroom, sautéed until the liquid is reduced)

  • 2 tsp dried (not powdered, you want it sort of whole) thyme leaves

  • 2 tbsp flour

  • 1 cup unsalted chicken broth

  • 2 cups heavy cream


For the Casserole
  • 36 oz of fresh or frozen green beans

  • 21 grams of French fried onions


Instructions for Soup:

  1. Melt butter in a large skillet over medium-high heat. Add onion and cook until softened. (If you are using fresh mushrooms in place of the umami powder, this is a good time to sauté them) Add garlic and cook until nice and fragrant, about 30 seconds

  2. Add flour, umami mushroom powder and thyme. Stirring constantly, cook until the flour has start to brown slightly, about 2 minutes.

  3. Stir in the chicken broth and heavy cream. If the soup is quite thick, you can go ahead and add some water 1/4 cup at a time. You want it to simmer for a few minutes to get all the flavor going.. Simmer for about 15-25 minutes, until it's the consistency you need. Add pepper to taste.


Preparing Your Casserole


  1. Preheat the Oven

    Start by preheating your oven to 375°F (190°C). This step is crucial to ensure your casserole cooks evenly and thoroughly.


  2. Prepare the Baking Dish

    Lightly grease a 9x13-inch (or similar 3-quart) baking dish. This will prevent the casserole from sticking and allow for easier serving.


  3. Mix the Ingredients
