I'll start with saying this. This isn't a recipe for everyone on a low sodium diet restriction. If you have to limit your potassium, this might not work for you.
This recipe is very simple. It's 4 bananas, some peppermint extract, chocolate chips and some food dye if you'd like. But I love to make this as a nice healthy treat every once and while when I'm craving ice cream, but don't want the guilt.
Ingredients
4 ripe bananas - you don't want any green in the banana or it will turn bitter
3 tablespoons chocolate chips
1/8 teaspoon peppermint extract
(Optional) Green food dye, or add some spinach, matcha or spirulina if you'd like the green color.
Directions
Slice bananas into bite size hunks and layer on a parchment lined baking sheet. They can touch, but you don't want to overlap. Freeze for a minimum of 2 hours.
Once frozen, add your bananas to a blender and whirl until it gets a nice creamy consistency.
Note: You may need to add a bit of water (a couple tablespoons) while you're blending to get a smooth consistency. You don't want to add too much and make it smoothie-like. It is better to push the banana down towards the center and keep blending if possible.
Stir in peppermint extract, chocolate chips and optional food coloring. Smooth the mix into a freezer safe container and freeze for a couple of hours.
