Low Sodium Muffin in a Mug

Who doesn't love a warm muffin on a cold and gloomy morning? This recipe is a quick way to get a warm, gooey muffin without all the work. And this low sodium muffin in a mug, is quick and easy.


And don't forget to get creative with the flavors. I used blueberries and cinnamon. Switch out the oil for half a banana and add some walnuts. Add some cocoa powder and chocolate chips. Or try some diced apples and drizzle with caramel.


This recipe, as written, is about 5mg of sodium



Ingredients

  • 1/4 cup flour

  • 1 tbsp brown sugar

  • 1/2 tsp sodium free baking powder

  • 1 tsp oil

  • 1/4 cup water

  • A dash of cinnamon

  • A few drops of vanilla

  • Handful of blueberries


Directions

  1. In a microwave safe mug, mix together flour, baking powder and brown sugar.

  2. Stir in oil, water, cinnamon, vanilla and blueberries.

  3. Microwave for 90 seconds. The top of the muffin should appear dry. If not, microwave for an additional 20 seconds.
