Nothing says summer cookout like a good old pot of beans. Well, the leading maker of baked beans touts the health benefits of their beans, but the sodium level being 1080mg per serving is astronomical and unacceptable on my loso diet.
So I did what I do best. I dusted off my favorite baked bean recipe and did my magic. Using a reduced sodium bacon made this a much more reasonable endeavor. The molasses in the recipe addes that umami flavor so your taste buds don't miss the salt.. This can easily be made in advance and refrigerated.
This recipe is 325mg for the whole pot, so about 82mg per serving (4 servings).
Ingredients
2 slices low sodium bacon, cut into ¼-inch pieces
1 medium onion, minced
4 1/2 cups water
1 cups dried small white beans, rinsed and picked over
½ cup molasses
1 tablespoon low sodium brown mustard
1 teaspoon cider vinegar
Directions
Preheat oven to 300° F. In a large Dutch oven, cook bacon over medium heat until fat is rendered. Add onions and cook until softened, stirring occasionally.
Add in beans, water, molasses and mustard, stir to combine. Bring to a boil
Cover and place in the oven. Bake until beans are tender and liquid turns into a thick consistency, about 4 hours, stirring once at about the 2 hour mark.
Remove from the oven and stir in the vinegar.
Serve hot, or let cool down and refrigerate.
